Cloves

CLOVES

Cloves are the aromatic flower buds of a tree in the family Myrtaceae, Syzygium aromaticum. They are native to the Maluku Islands, or Moluccas, in Indonesia. The clove tree is an evergreen that grows up to 8–12 metres (26–39 ft) tall, with large leaves and crimson flowers grouped in terminal clusters.

The flower buds initially have a pale hue, gradually turn green, then transition to a bright red when ready for harvest. Cloves are harvested at 1.5–2 centimetres (– in) long, and consist of a long calyx that terminates in four spreading sepals, and four unopened petals that form a small central ball.

Cloves are dark reddish brown, measure about 1cm in length, and look like a small pin with a stem that leads to a bud of unopened petals. They contain 14 to 20 percent essential oil, the principal component of which is the aromatic oil eugenol. Cloves are strongly pungent owing to eugenol, which is extracted by distillation to yield oil of cloves.

Cloves have a strong aroma and a pungent taste and are used to flavor many foods, particularly meats and bakery products. They are a common element in spice blends, including pumpkin pie spice and speculaas spices.
